With spring/summer threatening to make an appearance, the usual waistline panic has set in, which means only one thing: salads are back on the menu. Thankfully salad has come on a long way from the mind-numbingly dull combo of lettuce, tomato and cucumber and salad need not be a form of dietary torture. This one has very few ingredients, however it tastes absolutely delicious and is very fresh and zingy. I would serve this with grilled meat or fish as part of a savoury dish, however for those of you apposed to meat and fruit, it would work just as well as a healthy snack or dessert.
1 small watermelon
1 red chilli
1 large bunch of fresh mint
1 – Quarter the watermelon and run a knife around the skin and flesh of each section.
2 – Chop the flesh into bitesize pieces of roughly the same size, place into a large bowl.
3 – Finely dice the chilli, removing the seeds if you prefer it a bit more mild, and add to the watermelon.
4 – Remove the mint leaves from the stalks and roughly chop. Add to the watermelon and chilli.
5 – Zest the lime onto the watermelon and add the juice. Fold in the ingredients until fully combined. You can serve immediately, however it tastes even better after sitting for half an hour.
